Cìste Milis was established in 2015 by Alan Raymond, a trained pastry chef and baker.

With a long career working with pastry and cakes, Alan has gained great experience working for some top bakeries and restaurant kitchens.

A tradition of baking

Alan was taught to bake at a young age by his mother, also a great baker, and she still bakes every day now in her seventies. She is the woman who inspired Alan to bake.

Ciste Milis’ products have gained critical acclaim & awards from our customers, chefs & food writers.

We are so delighted to have won 2 awards at Taste of Cavan 2016.
First is for Best in Bakery and Confectionery & Second is for overall Best Product in Show 2016 for our Assorted Box of Luxury Tartlets.

Out & About

The bakery itself is located in the countryside outside of Kingscourt, Co. Cavan in a townland called Muff. A  beautiful location which is quiet and scenic with lots of history.

Cìste Milis trades at farmers markets country shows & food festivals all around the North east and Dublin.

A wholesale operation also supplies to cafès and restaurants where our delicious tartlets are served perfectly with teas and coffees or as dessert.

Passionate about quality ingredients

We are passionate about using top quality ingredients. We choose Irish dairy butter, cream and buttermilk because it’s the best you can find as well as its natural taste.
We use Free range eggs from  the award winning O’Egg company in Co. Cavan and also in-season fruits for our tarts are all sourced from Ireland when possible.
Alan is a passionate foodie and only chooses the best ingredients because he believes in quality.
A trained chocolatier also, Alan uses high grade Belgian chocolate for his chocolate fudge cakes and truffle tartlets – a smooth and rich flavour that gives a luxurious surprise.

Wedding Cakes & more

Alan is a trained wedding cake decorator and designer and so creates the perfect wedding cake for the happy couples big day.

The wedding cakes are both delicious and beautiful on display.

Cìste Milis tartlets and desserts are  perfect for parties and get togethers.

Sold in boxes of 30 or 40 mini assiette desserts or in large serving  cakes they are guaranteed  to go down a treat at any event.
